In the Costa Brava and Girona Pyrenees, food is more than just taste; it’s an experience. The local cuisine tells stories of fishermen coming back at dawn, farmers cooking through cold winters, trade routes shaping flavours, and families passing down recipes as part of who they are.

To give you a taste of these unique Costa Brava and Girona Pyrenees flavours, here are eight dishes you should try when visiting this part of Catalonia.

  1. Pa amb tomàquet (bread with tomato)
Few dishes are as simple or as meaningful as Pa amb tomàquet. Crusty bread is rubbed with ripe tomato, finished with extra-virgin olive oil and a touch of salt. What began as a practical habit, born in the countryside, evolved into one of the most recognisable expressions of Catalan culture. Pa amb tomàquet appears at family tables, tapas bars, Michelin-starred restaurants and seaside terraces alike.
  2. Arròs mar i muntanya (sea and mountain rice)
Perhaps no dish represents the Costa Brava better than Arròs mar i muntanya, which literally means “sea and mountain rice”. This dish combines fresh seafood and mountain meats with seasonal vegetables and is often prepared using the prized rice of Pals, renowned for its exceptional texture and quality. The dish reflects the region: fishing villages along the coast and agricultural communities inland.

  1. Trinxat de Cerdanya
Trinxat de Cerdanya, a traditional mountain dish from the Girona Pyrenees, particularly associated with the Cerdanya region. It’s made by boiling cabbage and potatoes, then mashing them together and frying the mixture with bacon or pork fat until lightly crisp on the outside. Its origins are rural, and potatoes were plentiful. Today, it remains widely served in Pyrenean restaurants and is especially popular during winter, although it is available year-round.
  2. Bunyols de Bacallà (Cod fritters)
Bunyols de Bacallà are small fritters made from shredded salt cod mixed with garlic, parsley, flour, and egg, fried until golden and crisp. Salt cod became a stable ingredient in Catalonia due to its long preservation life before refrigeration.

It played a crucial role in coastal trade and religious observance, particularly during Lent, when meat consumption was restricted. These fritters are served as an appetiser in many restaurants and tapas bars throughout the Costa Brava and Girona Pyrenees.

  1. Suquet de Peix (Fish stew)
Suquet de peix originated in a fishermen’s recipe in the Costa Brava region. It was originally made on fishing boats using unsold fish and pantry staples. The recipe combines various types of white fish depending on the day’s catch, potatoes, tomatoes, garlic, and a classic Catalan picada of nuts (usually hazelnuts or almonds), garlic and parsley. Suquet de peix has become a recognised regional speciality after being a simple working-class meal. Today, it is commonly found on menus in restaurants along the coast, especially in towns like Roses, Palamós, Calella de Palafrugell and Cadaqués. It is still one of the most characteristic seafood recipes of the Costa Brava.

  1. Pollastre amb llagosta (Chicken with lobster)
Pollastre amb llagosta is one of the most famous dishes that showcase the ”sea and mountain” tradition of Catalan cuisine, where the sauce may include tomato, wine, and a nut-based picada. The combination of chicken and lobster represents the historical fusion of farming communities in the mountains and fishing communities. Traditionally served at special occasions, it has become a staple in many restaurants in Costa Brava. This dish showcases how the Catalan cuisine is able to combine opposing ingredients to create a balanced and complex flavour.
  2. Xuixo de Girona (Cream-filled fritters)
The xuixo is the most representative pastry of the city of Girona. A cylinder-shaped pastry that is deep-fried and filled with cream and sugar. Its origins start in the early 20th century, and it’s still very common in bakeries. Traditional xuixos are filled with pastry cream, they are also made with chocolate or fruit preserves. It is usually eaten as a breakfast pastry or as a snack.

  1. Taps de Cadaqués
Taps are small sponge cakes, originating in Cadaqués, a coastal town. The history stretches back to the 18th century, when trade routes between Catalonia and the Caribbean influenced their creation. The cakes were typically flavoured with rum and baked in individual moulds. The cork-like appearance of the cakes led to their name, as “tap” is the word for ”cork” in Catalan. Today taps remain a local speciality and are made in Cadaqués to this day, symbolising the town’s historical link with overseas trade.

Located in the Arabian Gulf and home to a deep heritage and a unique culture, Qatar offers travellers a welcoming sanctuary where they can relax and experience more than they imagined. Encapsulated within these experiences is Qatar’s unique dining scene.

Much like the country itself, it is constantly evolving, featuring a blend of influences from India, Persia, Lebanon and North Africa. Qatari cuisine gives travellers a taste of the region in a single bite, with Doha ranking 7th in Tripadvisor’s Best of the Best Food Destinations. From top Michelin-starred restaurants to small hole-in-the-wall market stalls, or cafes for visitors to Qatar seeking a quick pick-me-up, travellers will be spoilt for choice with over 3,000 establishments offering a range of cuisines.

Upscale dining and Michelin stars

Qatar fine dining

For food lovers seeking polished, destination‑worthy dining, Doha’s upscale restaurants deliver the kind of experience associated with Michelin recognition, from elevated local flavours to sophisticated international tasting menus. One standout is Michelin-starred IDAM by Alain Ducasse at the Museum of Islamic Art, which pairs contemporary French cuisine with Mediterranean touches and dramatic views over Doha’s skyline. At the Michelin Bib Gourmand Jiwan, the National Museum of Qatar’s signature restaurant, diners can enjoy contemporary Qatari and Middle Eastern dishes on an outdoor terrace with sweeping city vistas, pairing culture and cuisine in one sitting.

For an alternative upscale dining experience, head to Bayt El Talleh over in the Katara Cultural Village. It might not have a Michelin recommendation, but this Levantine restaurant is a gem in its own right, serving generous Lebanese mezze and grilled specialties on a hilltop terrace overlooking the sea, perfect for long, laid‑back dinners with a view.

Immerse in traditional cuisine at Souq Waqif

Qatar fine dining

Beyond the white tablecloths, Qatar’s markets offer an atmospheric introduction to everyday flavours and the country’s famed hospitality. In Souq Waqif, Bander Aden serves traditional Yemeni dishes such as slow‑cooked stews in stone pots, all enjoyed on floor seating that adds to the sense of place. Hidden within the same historic district, Al Jasra, run by five Qatari women, invites visitors to sample traditional home‑style Qatari cooking in a relaxed, culture‑rich setting, turning a simple meal into an immersion in local life. While in the area, travellers can browse nearby stalls selling handicrafts, textiles and spices, making a visit to Souq Waqif as much about soaking up the atmosphere as it is about the food on the table.

Dinner in the desert

Qatar fine dining

In the days of old, Bedouin tribes would move across the desert to let their animals graze. They would set up camps and trade with other tribes. Today, travellers can have a taste of what meal times look like with Discover Qatar’s Dinner in the Desert experience. During the tour, experienced guides take guests on an off-road cruise through the desert while sharing more about Bedouin heritage and Arabic traditions. The journey will also include an authentic Arabian feast prepared in a traditional Bedouin setup overlooking the Arabian Gulf.

Beyond the restaurants

Qatar fine dining

Time a visit to coincide with the Throwback Food Festival (17 February – 19 March) at the Old Doha Port and “taste the past” with dishes inspired by Qatar’s cafés and restaurants of the 1970s, 80s and 90s. More than just a tasting event, it brings together nostalgic comfort foods, live cooking demos and interactive workshops that spotlight the recipes, ingredients and stories behind much‑loved classics. With free entry, extended daily opening hours from morning until late evening and a lively programme of entertainment and family‑friendly activities, it’s an easy and engaging add‑on to any culinary itinerary in Qatar.

Qatar is also home to a variety of vibrant cafes and independent coffee shops which are perfect for catching a quick break during the day. In the Arab world, coffee culture goes beyond the simple cup of Joe. Arabic coffee is imbued with tradition, with elaborate rituals surrounding the preparation, serving and consumption. Today, cafes like Walter’s Coffee Roastery in Lusail City, Flat White Specialty Coffee at The Pearl Qatar or Kava Koffee in the Katara Cultural Village have blended this tradition with modernity, offering a taste of the heritage set against the backdrop of Qatar’s iconic skyline.

The launch marks Caroline Martins second restaurant in Manchester following SAMPA – one of the city’s most sought-after dining experiences. BRASA is set to be a celebration of Brazilian barbecue

Manchester’s dining scene is set to welcome an exciting new addition this spring as acclaimed chef Caroline Martins announces the opening of her second Manchester restaurant, BRASA. Following the remarkable success of her chef’s table restaurant SAMPA, which currently has a four-month waitlist, Caroline is giving food lovers an opportunity to experience her celebrated Brazilian cookery in a new, more relaxed setting. With demand for SAMPA showing no signs of slowing, BRASA offers a new way to secure a table and enjoy her bold, fire-led flavours.

BRASA is a vibrant Brazilian barbecue concept that places the grill at its heart, celebrating the warmth, generosity and theatre of traditional churrasco cooking. In contrast to the refined twelve-course tasting menu at SAMPA, BRASA will serve a generous à la carte menu with a focus on the grill. Guests can expect barbecued flatbreads such as Pão de Alho, alongside Pão de Queijo – Brazil’s beloved cheese bread – served with caramelised onion butter. Salgadinhos, a selection of Brazilian croquettes filled with chicken, beef and cheese, will be paired with smoked chilli mayo, while a charcuterie plate of lomo, fennel salami, spianata romana and house pickles brings a nod to European influence.

Brasa Manchester

The menu will showcase prime cuts cooked over fire, with traditional large cuts alongside a signature BRASA steak frites, a very special barbecued Picanha rump served with annatto-seasoned Julienne fries and Caroline’s requeijão peppercorn sauce, as well as platters such as Linguiça na Chapa, featuring pork sausage and onions with Brazilian condiments, served family style. The larger sharing cuts will include a 450g ribeye, a 650g T-bone and an impressive 900g bone-in prime rib. Sides will range from hand cut skin-on fries tossed in annatto seasoning to feijão preto of black beans with garlic, bacon and coriander, and a fresh heart of palm salad with cherry tomatoes, black olives, red onion and parsley.

Brasa Manchester

Caroline Martins’ journey to this point has been anything but conventional. Raised in the suburbs of São Paolo, she initially built a career in science, completing a PhD before moving to Texas to work in academia as a plasma physicist. A desire for creativity ultimately led her to swap the laboratory for the kitchen, enrolling at Le Cordon Bleu in London in 2017. After further training in Italy and time spent in some of London’s most respected kitchens, she relocated to Manchester, falling in love with the city’s burgeoning food scene. Following a series of acclaimed pop-ups and appearances on BBC’s Great British Menu, she opened SAMPA in 2024, where her British-Brazilian fusion tasting menu and intimate chef’s table format have been a sensational success.

With BRASA, Caroline returns to the bold, generous flavours of her upbringing, presenting them in a more informal and fire-driven format while maintaining the technical excellence for which she has become known.

Reservations are now open at www.brasabarbecue.co.uk.

Follow @brasa_steaks for the latest updates.

Further details, including the official opening date and location reveal, will be announced in the coming weeks.

The North of England doesn’t always get the credit it deserves for speciality coffee, but it should. Over the last few years, independent roasteries across the region have quietly been doing really good work. Thoughtfully sourced beans, careful roasting, and spaces that feel rooted in their local communities, not built for Instagram first.

Great coffee roasters don’t need a London postcode. If anything, the North’s approach feels more grounded. Less flash, more focus on flavour, fairness, and doing things properly.

What To Look For In An Independent Roastery

coffee roasters

If you’re exploring independent coffee roasters, it’s worth keeping a few basics in mind early on:

  • Fresh roast dates and good turnover
  • Clear information about the origin and flavour
  • Transparency around sourcing and ethics
  • Consistency from batch to batch
  • A roasting style that suits how you brew

The best roasteries aren’t just selling coffee. They’re building trust and sharing what they know.

With that in mind, here are five independent coffee roasteries in the North worth knowing in 2026, listed in no particular order, starting with one of the region’s strongest names.

1) Crosby Coffee Liverpool Roastery, Liverpool

Crosby Coffee has become a go-to roaster for lots of people in the North. The Liverpool roastery is the hub of everything they do, supplying both home drinkers and cafés with coffee that’s consistent, well-roasted, and easy to enjoy.

They focus on small-batch roasting, which helps keep things fresh and controlled. The range is broad without feeling intimidating. There you’ll find reliable everyday blends alongside single-origin coffees that are interesting without being overly experimental. Their beans come from all over the world, so there’s plenty to explore beyond the usual favourites.

What works about Crosby is the balance. The coffee is clean, balanced, and brewed to taste good, not to impress with jargon. If you want a clear example of how good northern speciality coffee can be, Crosby Coffee’s Liverpool Roastery is an exceptional place to start.

2) North Star Coffee Roasters, Leeds

coffee roasters

North Star has been part of Leeds’ coffee scene for a long time, and its influence shows. They’ve built a reputation around ethical sourcing and long-term relationships with producers, which runs through everything they do.

Their roasting style tends to suit people who enjoy lighter, brighter coffees with clarity and sweetness. There’s also a big emphasis on education, with training and support for baristas and café owners, not just selling bags of beans and moving on.

That mix of quality coffee, values, and industry knowledge has made North Star one of the most respected roasters in the North.

3) Dark Woods Coffee, Huddersfield

Dark Woods Coffee is based near the Yorkshire moors, and something is fitting about how calm and considered their approach feels. They focus heavily on balance, consistency, and getting the best out of each coffee without forcing it.

The range covers dependable blends and rotating single origins, all roasted to be approachable rather than challenging. It’s coffee that works just as well at home as it does behind a café bar.

With strong producer relationships and tight quality control, Dark Woods has earned a lot of trust across the region.

4) Rave Coffee, Cirencester (North Distribution)

Rave isn’t a northern roaster by origin, but its presence across the North is hard to ignore. Through distribution and partnerships, they’ve introduced a lot of people to better-quality coffee for the first time.

Their style is accessible and friendly. Clear flavour notes, bold branding, and coffees that are easy to brew and enjoy. It’s speciality coffee without the intimidation factor.

For anyone just starting to move away from supermarket beans, Rave makes that step feel simple.

5) Clifton Coffee Roasters, Bristol

coffee roasters

Clifton Coffee Roasters is based in Bristol, but its influence stretches well into the North through café partnerships and wholesale supply.

They’re known for careful sourcing and a precise roasting style that brings out origin character. The coffees often suit more experienced drinkers who enjoy a bit of complexity and nuance.

While not northern by geography, Clifton’s footprint in the northern coffee scene is big enough to earn it a place here.

Why The North’s Coffee Scene Works

A lot of northern roasteries benefit from strong local networks and slightly less pressure to chase trends. Lower overheads than London help, but so does a genuine focus on community and collaboration.

There’s also a noticeable effort to help people understand coffee rather than mystify it. Where it’s grown, how it’s roasted, and how to brew it well at home are all part of the conversation.

That openness has helped speciality coffee feel more normal and less niche.

Try Exceptional Coffee in the UK

If you’ve only ever thought of London when it comes to great coffee, the North might surprise you. Places like Liverpool and Leeds are quietly building a really strong speciality scene, and the roasters here are doing things properly (but without all the fuss).

Each of the roasteries on this list has its own style, so you can try something different every time. The best part? You don’t need to travel far or spend a fortune to find a really good bag of beans. More independent roasters means more options, and that’s great news for anyone who loves a decent cup.

It’s rare to chance upon a hidden gem in Soho. Long gone are the days wherein you can stumble upon a small eatery, nestled in some unexplored nook. Chez Antoinette is perhaps the closest thing you can find within the untrodden realms of ‘I found this first.’

Located in the heart of Covent Garden, this French-brasserie is unassuming. It would be easy to gloss over it in choosing a spot to eat: corporate set lunches of French food  has made the concept of brasseries in London feel tired. Anyone with a passion for good food avoids these copy and paste establishments like the plague.

Yet Chez Antoinette is a very different experience from your half-seasoned steak avec frites. The main reason? It is run and owned by husband and wife duo Aurélia and Jean-Baptiste Noël-Delclos, who infuse the walls with a warm French charm. This is no cash-pig: instead, it’s the child of gastro-love making, a restaurant that, despite all odds, remained independent and true to family cooking.

Chez Antoinette Covent Garden

Rustic antiques, art deco table lamps, oak and brass hues characterise Chez Antoinette with an approachable style of glam. It is both upmarket and unapologetically rustic, without being gimmicky. That being said, there is a dessert table, clad with delightful looking sweet treats. It screams of the 1980s, or very expensive hotels. I want to brandish this as tacky, yet its effect casts a domestic glow over the dining room. It feels indicative of Aurélia’s motherly affection as she guides us through the dining room.

The menu at Chez Antoinette is unassuming. It’s as if a Lyonnaise-café wed a Parisian bistro. The food is simple and surprisingly light: if you’re expecting whole cuts of meat to be plonked at your table, smothered in butter, then you’re in the wrong place. Good French gastronomy focuses more on utilising simple, high quality ingredients.

Take for example, the Sausage & Lentils. It is, indeed, just that: one large, juicy Morteau sausage with gently cooked lentils. Or the Duck Confit Salad – shredded crispy confit duck tossed in a tangy salad dressing. And, whilst there are some classically identifiable French items – snails in garlic butter, or beef bourguignon, the menu hasn’t been written to fit any mould.

Chez Antoinette doesn’t cater to diners shopping for pretentiousness. This is refined home cooking, at its best.

Global communications agency We Are Indigo has secured the UK launch brief for Meili Vodka, the premium spirits brand co-founded by international film star Jason Momoa, supporting a new long-term partnership with leading hospitality group Permanently Unique.

The appointment sees We Are Indigo leading strategic PR around the Meili Vodka UK debut, anchored by a high-profile launch in Manchester and the establishment of Meili as a permanent brand partner across Permanently Unique’s flagship venues, including Fenix, Louis and Tattu Manchester.

Jason Momoa arrived in the city last weekend to mark the official launch at Fenix, The Goods Yard, coinciding with the Prime Video release of his latest feature film, The Wrecking Crew.

The partnership was initiated following a meeting between Momoa and Permanently Unique in Dubai and represents a significant step in Meili Vodka’s UK growth strategy.

Drew Jones, of Permanently Unique, said: “From our first meeting with Jason, it was clear there was a strong cultural and commercial fit. Meili Vodka aligns with our approach to building distinctive venues and long-term brand partnerships, and we’re pleased to be launching the brand in Manchester.”

Gemma Krysko, Founder of We Are Indigo, said: “This win reflects the continued evolution of our portfolio and our strength in delivering integrated PR for hospitality, premium drinks and culturally-led brands. Being trusted to manage a UK launch of this scale, involving global talent and a major hospitality group, underlines both our global position as a PR agency and Manchester’s growing influence as a launch market.”

The campaign concluded with a performance with Oof Tatata, a rock band powerhouse trio featuring actor Jason Momoa on bass, Mike Hayes on guitar and vocals, and Kenny Dale on drums at Louis, further amplifying the launch’s profile through Jason’s appearance in the city.

Meili Vodka is distilled using a blend of corn and mountain spring water, with a focus on sustainability, craftsmanship and adventure-led brand storytelling. The Manchester launch forms part of a wider UK rollout planned for 2026.
