Walker’s Shortbread
Make Scottish Cranachan for Burn’s Night on 25th January! Cranachan is a classic dessert that brings together the finest ingredients of the Highlands, home to Walker’s Shortbread. Here’s a shortbread inspired recipe:
4 Walker’s Shortbread Fingers broken in pieces, 1 carton Walker’s Shortbread Oat Shortbread broken in pieces, 1 shortbread finger for the topping from Wee Shorties Mini Shortbread Fingers Pack. Plus 200g raspberries, mashed with a fork plus extra to serve, 300ml double cream, 5 tbsp Greek yoghurt, 50ml Single Malt Scotch Whisky, 2 tbsp honey, and 25g unsalted butter melted.
Crush shortbread, add honey and butter, mix well. Cook in oven and 10 minutes on 200 Celsius. In separate bowl mix cream until stiff peaks, add Greek yoghurt and whisky. Fill glass or dish with cream, add crushed raspberries, and shortbread pieces, repeat until glass or bowl is filled. Finally add whole raspberries and Walker’s Shortbread Wee Shortie. Serve and enjoy!
